Just had my delivery of fresh free range eggs from Moor Farm at Calow.
Seeing them all nice and dark brown in trays reminded me of when I was training in the kitchens at the Hyde Park Hotel London.
In the pastry section I was 1st commi. One of my jobs was to organise the apprentice trainee chefs and give them the jobs for the day.
There was a young 15 year old who loved Led Zeppelin and looked like Robert Plant, with long hair.
I asked him to separate 108 eggs for ice cream (we were a very busy hotel).
Ten minutes later he came back and said “ I’ve done it” so I said bring them over, thinking to myself we’ve got a good one here. But then the bubble burst. He had only separated the white eggs from the brown ones!
